Making pickles!!

Today has been an exhausting day, but a wonderful day. It started this morning with picking veggies from the garden. I really didn’t think I had that many cucumbers, but I had a TON of zucchini! My zucchini has like no other veggie I have ever grown! And, this is the first time I have ever planted it!! I am very pleased, to say the least.

So, this morning was time to pick and prepare for pickle making! My daughter and I had made plans to make pickles today since she has a good crop of cukes, as do I, not to mention the zucchini! I found a recipe for zucchini pickles that I want to try.

Well, after the picking is done, we head to the store to get our canning/pickling supplies. We bought jars, and spices, lots of sugar and vinegar, and a neat little kit with a jar holder, magnetic lid lifter, a funnel, and a little tool to help remove extra air from the jars!

4 hours later, after a trip to Walmart, Family Dollar, Tractor supply, and Brookshires, we finally head home to prep our cukes and make some pickles!! I’m starting to have concerns since my back is already killing me, and I am pretty close to exhausted! Thankfully, we had bought some lunch so we sat down and enjoyed our lunch after getting all the groceries unloaded and put away. Thank the Lord for a chance to rest a bit before the real work started!

Well, after washing jars, lids, cucumbers, pots and pans, and last nights dinner dishes ( I KNOW!!), slicing the cucumbers and onions, mixing the spices and vinegar, packing the jars, and water bathing them, about 5-6 hours later we have 12 pints and 12 quarts of bread and butter pickles! Can’t wait to taste them.

Only downfall….we haven’t even touched the big bushel basket full of zucchini!!
